A charming new addition to Liverpool’s Georgian Quarter has emerged in the form of The Dog and Collar Pub, nestled inside the iconic building once occupied by the beloved 60 Hope Street restaurant. Spearheaded by the creative minds behind Duke Street’s PINS Social Club, this new venture has undergone an extensive transformation to bring a warm and traditional pub atmosphere to the heart of the city.

Upon stepping foot into The Dog and Collar, patrons are greeted with a promise of an “elevated dining experience” within the inviting confines of the first-floor dining room. The top floor of the establishment has been designated as a taproom, while the basement has been repurposed into a cozy ‘tavern’ space. Each floor exudes a distinct ambiance inspired by the owners’ adventures in renowned pubs across London, Cheshire, and New York, offering a unique and immersive experience for guests.

Heading the culinary team at The Dog and Collar is Liverpool’s very own chef extraordinaire, Livia Alarcon. A familiar face from her appearances on Great British Menu, Livia brings a wealth of experience from her time at popular independent eateries like Maray, where she rose to the position of head chef at the young age of 21. Most recently, she helmed her own establishment, La Bistroteca, at the bustling Baltic Market, showcasing her expertise and passion for inventive cuisine.

The moniker of the pub, The Dog and Collar, pays homage to the establishment’s close proximity to both the Anglican and Catholic Cathedrals that bookend Hope Street. In a conversation with the ECHO, Daniel Gillbanks, one of the co-owners of PINS, shared insights into the vision behind this exciting new project, emphasizing their aim to harmonize the pub’s offerings with the evolving culinary landscape. Gillbanks remarked, “We wanted to complement the building and align it with current market trends. While not classified as fine dining, our focus is on delivering top-notch food and drink spread across three distinct levels. The ground floor taproom caters to a more relaxed atmosphere with fewer reservations, welcoming walk-ins for a casual dining experience. Upstairs, the dining room offers a more formal setting for guests to savor their meals, while the tavern in the basement maintains a laid-back ambiance.”
